What makes a spirit a spirit?

Distilled beverages (also known as liquors or spirit drinks) are alcoholic beverages made by distilling (that is, condensing) ethanol created by fermenting grain, fruit, or vegetables. Spirits are alcoholic beverages that are unsweetened, distilled, and contain at least 20% alcohol by volume (ABV). The alcohol level of the most common distilled drinks, such as whiskey and vodka, is around 40%. In North America, the term “hard liquor” is used to distinguish distilled beverages from others that have not been distilled (implicitly weaker). Distilled drinks include vodka, gin, baijiu, shch, soju, tequila, whiskey, brandy, and rum. Distillation concentrates alcohol while also removing some of the congeners. In applejack, freeze distillation concentrates ethanol, methanol, and fusel alcohols (fermentation by-products that are partially eliminated by distillation).

A fortified wine is one that has had a distilled beverage (typically brandy) added to it, such as port or sherry. The difference between fortified wine and spirits made from wine is that spirits are made through distillation, whereas fortified wine is just wine with a spirit added to it. Port, sherry, madeira, marsala, commandaria, and the aromatized wine vermouth are just a few of the fortified wine varieties that have been developed.
